Craftsmanship in Bakery & Patisserie

Students will be able to unlock the art of bakery & patisserie, transform themselves into skilled bakers and patissiers with our comprehensive hands-on course. Our programme is especially designed for beginners and enthusiasts. This immersive programme dives into the science and technique behind exquisite Bakery and Confectionary products. Our programme enables students to:

  • To gain practical experience and expertise,

  • To master industry-standard equipment and techniques,

  • To learn the chemistry behind mouth-watering recipes,

  • To develop hands-on skills in bakery and confectionery,

  • To elevate your baking skills from fundamentals to advanced techniques.

Our expert faculty members will guide you through:

  • Bread making and Viennoiserie,

  • Cake decorating and design,

  • Art of sugar craft

Our state-of-the-art Bakery Lab features:

  • Professional Equipment: Rack ovens, Rational ovens, commercial mixers, and dough sheeting machines.

  • Specialised Facilities: Temperature-controlled enclosures for chocolate and sugar work.

  • Individual Workstations: Fully equipped for hands-on learning.


Upon successful completion, students receive a certificate and become eligible for placements in luxury hotel bakeries or A-grade “standalone” patisseries.

Dynamics of Baking & Patisserie

Candidate joining this course will be able to transform himself/herself into a confident and an independent baker with our comprehensive two-level programme. This programme is designed for both beginners and advanced bakers. This immersive course delivers hands-on training in the art and science of bakery and confectionery. It will enable candidates to

News & Events

  • Theme Lunch/Dinner: The department of HAFT organizes a series of theme lunches/dinners for students to provide hands-on experience in event planning and hospitality services. These events offer students the opportunity to collaborate, network, and practice their skills in a real-world setting, with a focus on professionalism and customer service. One of the major highlights of our annual exhibition is the dinner held during the same time, which is usually by the last week of February.

  • Demonstrations: There are several demonstrations held in the department for the students to impart knowledge about various skills in the industry, ranging from culinary techniques and food presentation to front-of-house management and customer service. By observing industry professionals in action, students gain practical insights into the best practices and standards required for success in the field. These interactive sessions foster learning, inspire creativity, and offer students the opportunity to ask questions and receive feedback, further enhancing their education and preparing them for real-world challenges in the hospitality sector.

  • Assignments and presentations: Assignments and presentations play a crucial role in helping students develop both their theoretical knowledge and practical skills. These assignments are designed to challenge students’ critical thinking, problem-solving, and research abilities. In addition, presentations offer an opportunity for students to showcase their findings, ideas, and solutions in a professional setting. By preparing and delivering presentations, students refine their communication, teamwork, and public speaking skills, which are essential for success in the dynamic hospitality field.
